These are not deeply thought through as it is nearly 2 in the morning as I type this out, but these are a bunch of job ideas I've had the past couple hours: (Obviously most of these are probably not possible or easy to accomplish, but maybe it will spark ideas in the developers)
Author - Writes books, gives to some type of "Editor" individual for publishing/copying. (This would probably not be for an NPC, but rather a player or admin-ran process)
Groundskeeper - Similar to what was done with the Farming, the Guild Master (or some sort of NPC city administrator) would assign the worker to clean the streets of moss (mossy cobble/stone brick) and/or fill in potholes, etc.
Entertainer/Actor - The Employer would run to you whenever you have a gig, and you would be teleported right into the play, your skin would change to where you'd have a mask on, and you'd be animated (along with other NPC actors) in some sort of pattern. The pay would be decent, so maybe you have to get to a high level in a different job before this one.
(Cart) Escort - Perhaps we could have an underground rail system of some kind where you'd have a job riding with a convoy of chest-carts to a different location and every once in a while there might be a zombie or skeleton that stops said convoy, so you have to kill it, and continue onward. This may be difficult, but I thought it was a cool idea.
Castellan - High-paying cleaner/up-keeper of a castle or holding or keep of some kind. This would probably be available to the high-level Groundskeeper or Farmer's helper.
Cook (in a Diner) - Prepare food/drink orders given randomly, give to NPC waiter when finished. A limited amount of time for each order.
Messenger - Explains itself; you're assigned letters/books to take to different locations/people. At first, they would have petty messages, but as you rank up, the letters contain more valuable information/juicy lore. The catch is, you're paid 75% less if you read it.
Scribe - Writer of messages/documents assigned by Nobles.
Sailor - Maybe have a ship or two randomly in the middle of the water somewhere, where you perform tasks like patching up holes, organizing cargo (putting foodstuffs in right chest, tools in right chest, blocks in right chest, etc) and maybe a certain scenario where a group of mobs raid the ship and you have to defend from them? Idk!
Executioner - Maybe it costs a lot to go to some sort of "executioner school" and in turn you get paid to switch levers on galleys, chop heads off, etc. (You would receive the head with which, similar to the Fisherman job, you would give to a Noble or Lord and it'd be added to your paycheck.)
Gamekeeper - Makes sure there are a certain number of cows/pigs/etc in a certain area. (IRL these people would prevent animals from being over-hunted and not die out)
Master of Hounds - Keeping a group of Wolves fed with meat, "training" them (make them hunt sheep), keep water in their bowls (cauldrons), take them for walks. (idk)
Mercenary Bodyguard - Travel with a certain NPC making sure they are not attacked by enemies of some kind, and if they are, protecting them and killing off said enemies. (Contract type job, get paid on completion of contract)
Squire - After you reach a certain level in a job, and you have enough money, you pay whatever amount and you do various petty tasks for a Lord.
After a while you become a Knight with which you get paid a decent amount.
Other Miscellanious ideas:
Library/Book Shop - people can write books and bring them here to be sold/checked out
Tannery/Dye Works - Leather Armor is made and dyed here
Tax Collector's Office - Explains itself
Inn/Tavern - Social gathering/Over the night staying place.
